We tried some of your food today for lunch. It was fantastic! I made the peanut masala with potatoes and rice. I put them in the pan with some water and, when they were parboiled, I added some oil and lightly fried them. I added the peanut masala to them at that point just to coat. I went in my garden and picked some fresh peas and put those on top for presentation. I served the pototatoes over the saffron rice.
My first impression of the peanut masala sauce was that it reminded me of Thai food. Regardless of what memories it brought back, it was really, really good. The spice was just right. I added just a little water to it, because I thought it was too thick for the potatoes, but the water did not water down the flavor at all. I did not season the potatoes, except for the little oil I added.
This was the best Indian meal I "made" at home! It was really delicious. When I first tried the peanut masala sauce, I did a little happy dance and the baby (inside my belly) kicked for joy.
